LibreELEC (much like the alternative also discussed here) is an all-in-one operating system and Kodi installation with builds made specifically for the Pi.
I have found the Pi 5 extremely reliable for audio, but it seems to be a step backward from the 4 for video. I realize that's not important to you right now, but I wanted to mention it just in case.

It has its own screen, and there was no TV in the system. I don’t know what its output connections are, either. I can ask about that, but a lot if what he has on display is definitely rich boys’ toys.

FYI - I bought a NUC for $250, connected it via HDMI to my AVR and use J-River to play music. Use my tv as the monitor. No tweaking/building required. Cost-effective and I have no complaints. J-River has an app so I can even use my phone to control everything when I'm too lazy to pick up the mouse/keyboard. Food for thought.I really don't want to buy/build an HTPC type device and have it connected to an AVR. However, a Raspberry Pi sounds interesting (as it offers two HDMI outputs) but only if it can bit-stream lossless Dolby TrueHD audio (with Atmos) and DTS-HD MA via HDMI and transcode 6 and 8 channel Flac to LPCM...
