There are some. This is something that can be more easily done using Tidal than Apple Music because you can better identify the different mixes based on immersive mix engineer credits. What service are you using?
 
There are 2 Atmos mixes of Counting Crows - Mr. Jones. As both have the same track length you can’t easily distinguish between them on Apple Music. In fact, I don’t know if the old mix is still available on Apple Music.

Were you able to find the older Atmos mix of Mr. Jones on Apple Music or is it gone?
 
Aren’t there a couple of Roxy Music tracks with 2 mixes out there? More Than This and Avalon I think.
Yep. There are different mixes for these songs on the "best of" compilation, compared to the new ones on the album "Avalon".

Different Atmos mixes of the exact same songs? Meaning this Atmos version the drums come from front heights and this Atmos version the drums come from rear heights, as an example.
No, there is no such recordings, yet.
Atmos versions streaming vs Atmos versions physical disc or download? They are the same just different media/bitrate.
John Lennon's recent Mind Games has different versions of Mind Games in Atmos.
Peter Gabriel calls his Atmos i/O Inside Mix.

So if I understand the question it can only be different streaming versions?
 
Do they include overheads?
They technically do, but as far as I know, there is no way to listen to Sony 360RA and get overheads, which is at least part of why the format failed. Denon/Marnatz didn’t start supporting 360 until last year, but it doesn’t matter because I don’t think there are any streaming boxes that know what to do with MPEG-H (the underlying codec). So you may be asking, well what is the point of acquiring 360RA files - well they still have a 7.1 channel bed, and since there was a stupid format war, there were some releases that were 360 exclusives.
