I can confirm a few things:

There are only two audio selection choices: PCM Stereo and Dolby Atmos. Nothing hidden, no secret menu for dts 5.1, etc. Since they did market this with a dts MA 5.1 and the dts-MA is most certainly NOT available on the blu ray, I will not only be writing to voice my displeasure but that gives this a big ol' zero. Misrepresenting a product is not good customer service.

This sounds FANTASTIC!! Yes some of the songs are on the more conservative side, but the mix in general is active. Maybe not aggressive but very active. This gets a solid 9 or 10.

I reserve judgement on the packaging though. For the cost of this, seems somewhat flimsy. It's heavy because of the book glued into the right side. The spine box/tube containing the posters appears to be of the type, if you open and close the flaps too often, they will wear out and flop open. The gatefold on the left containing the discs has thick pages, but the spine itself is paper thin, enough flipping and likely it will become loose or tear. Packaging gets a 3 or 4.

No. And that would simply discard some information (I think, unless I also went in to the AVR and told it there were no heights - what a PITA). Not what I was getting at.
I meant, go into settings (Amp Assign) and choose 5.1 or 7.1 without adding heights / ceiling speakers. I haven’t done it but I’m pretty sure you can save it as a preset...no? I haven’t looked at the manual. Even if you can’t save the setting, not sure why it would be a PITA if you wanted the best sound, to your ears. Only trying to help.
 
The videos...now that's a different story, only 2.0 PCM, not sure why they couldn't also use the already created ATMOS tracks for the three videos.

Are these live videos or music videos? I’m thinking you could mix the Atmos audio to match the video if it’s not live.

I'll go back and look but they may have been live videos which in that case better to have the stereo original version than to try to match the Atmos.
 
It is fully compatible, but like you, I wish it had a dedicated, lossless, 5.1 mix directly from the Atmos mixing software.

Fully compatible is in the Blu-ray/Atmos/TrueHD spec to work on old devices. This particular disc is compatible in two ways. 1.) HDMI/analog outs set to 5.1 speakers will downmix 7.1 bed to 5.1 lossless. 2.)SPDIF out to DD receiver will use the built in DD 5.1 track sometimes called the core track.

Based on my Abbey Road experiment it seems for my system Atmos 7.1 is in fact "fully compatible" with a 5.1 AVR.
I was freaking out, but now I will calmly wait for my Wednesday delivery of GHS with no qualms.

I'll be playing the Atmos surround mix from my oppo 205 / analog out to my 5.1 Marantz AVR. and see how that sounds, and take a look at the spec. window while playing.

This is what I see using my Sony BDP-X800 and Yamaha RX-V375, mid-grade home theater devices.
The AVR processes the 5.1 mix @ 96k, but the 7.1 @ 48k.

That is where the speaker settings are. In the AVR. Test the Abbey Road like someone else mentioned.

It seems to me this is what I am observing.
When the Blu Ray Player is outputting 7.1, the receiver window verifies that, but it plays 5.1 since what it's capable of.

The second image in each case is the Blu Ray player display, the third is the AVR signal input display.

This was not a PITA for me to explore, rather a load off my mind.
The joy is in the journey, as a wise man said.

So I didn't get those 3 extras on my first run through; I'm going to borrow Jon's MakeMKV pic to highlight what I believe are the extra 3 songs in Atmos, does that look right?

And the pics on the 5.1 are 96k (@~dave~~wave~) hmmm... Guess I'll have to have a go at the 5.1 DD also and compare.

That matches what's on the disc - 10 tracks on the main album and 3 bonus tracks, all TrueHD/Atmos
It's not always easy figuring out those menus, the line above it is 4 chapters and the 10 tracks shows 11 but I can confirm one of those was tossed out as silence or something.

Yeah it took me a few looks at that break out menu and add to it that I'm tired, so I'm thinking in my head...10 tracks or 11 tracks?? LOL :SB

Yeah, no worries, my friend. I think there's been some level of misunderstanding in all the excitement over this release.
I mean, c'mon, y'all! It's an entire Rolling Stones album in surround. I'm just bummed for any affected that there is no dedicated 5.1 steam. I honestly think the label should be contacted, so that it can be determined whether they should reauthor and repress. If this release were priced at around $40 - 50, I might feel differently, but they went in to premium territory here.
Atmos sounds just fine to me, and I don't want to go through several minutes of fannagaling through settings to trick my AVR in to thinking it has not Atmos speakers attached, particularly since that could have unknown ramifications for my Audyssey auto calibration settings. More trouble than it's worth, for my use case at least.

The suggestion was as an experiment. Does the 5.1 miss anything compared to the Atmos.

Yeah, I hear ya. Still, it doesn't align with experiments I already have planned, e.g. recording the isolated Atmos speakers (kinda the opposite). I'm not made of time! Full-time job and daddy to a youngster!
I'd really like just to put albums on and simply enjoy them, but some experimenting, analyzing and reviewing is fun too.
