I know about this option in the settings. Question is, is it enabled by default? or out of the box?
With the release of IOS 14.6 Dolby was set to „automatic“, so that depending on the hardware, Atmos or stereo was chosen.
But anyhow….any user can turn it on/off.

i have been having many issues with some of the latest ATMOS on Apple as I have said here on this thread.i wish I could enjoy this LP.
IE on "Don't you know that." The only vocals I get are "Don't you know that", all Luther's other lines are absent. Same on other songs, and even worse issues on other ATMOS albums music I have said in this thread.No need to restate all those.
Seems like Apple feedback never give you a feedback ticket number or a response

This is alarming as you appear to have issues that are possibly outliers, many of us are not having the same. Could you detail your equipment and settings for us, perhaps we can help?
To be honest it sounds like you have some kind of configuration issue, like your center speaker isn't connected or Atmos isn't properly configured on your processor (maybe you have told it you have speakers that aren't actually connected?). If "vocals" are missing, that sure sounds like the center channel is missing for some reason. Put your ear up to the center channel when listening to Atmos, is anything coming out of it?

i wonder how they got around the issue of the Atmos mix being the default (which was apparently why it was pulled from the service in the first place)..?
And there are two separate versions now. One lossless and one Dolby Atmos. The one I have in my library was added when it first came out and the tracks still indicated they were Lossless (Get Info), but now play in Atmos. I downloaded them, and they downloaded Lossless, but now after deleting the downloads they indicate they are Dolby Atmos now. I tried to add the second version of the album that just says it is "Lossless" but it won't let me. Definitely messed up, but Atmos is back.
I see only one version of the album
When I view the one that shows Dolby Atmos (using the Music app on a Mac) and scroll down it says "Other Versions" and if you select the one down there it indicates it is lossless. The Atmos/Explicit version has the Nice Price sticker on the cover art the "lossless/clean?" one doesn't.
Spooky….last night after listening to Luther…..I thought, “I wish John Mayer - “Sob Rock” would reappear in Dolby Atmos…..& sure enough my prayers were answered !

The annoying thing is, it’s stopped playback twice & I haven’t got to the end of the album yet !
Up until last night, I had put on Apple Music probably once in the last two weeks & I find this has consistently happened since the launch / subscribing.
It’s beyond annoying !

1) Do I need to subscribe to Apple TV to play my Apple music subscription through it? and
2) Since I don't have an ATMOS setup (no speakers), will it play in 5.1 through my receiver?
I have been listening to ATMOS in my headphones and like the sound (far better than I did the Sony 360) but I would much prefer to listen in my listening room when I can.

1. No, no need.
2. It will play Atmos in your 5.1 setup. It will adapt to your setup. Atmos is object based, not channel based.
